Barley,
the soluble fiber in barley can help lower blood levels of the harmful
LDL cholesterol without affecting the levels of the beneficial HDL
cholesterol. Other studies compared the effects of various grains
on insulin and blood sugar levels and found that breads made with
Barley were far more in controlling glucose levels than products
made with wheat and other grains. Animal studies have indicated
that Barley may help protect against cancer, especially colon cancer.
